Snacks can often be a very important aspect of your child’s diet, so it’s important that you feel good and confident about the what you give your child.
My little girl is on a gluten-free+ dairy –free diet and it has been my goal to make homemade snacks for her and her siblings to make sure they are getting the right kind of nourishment like fibers, proteins, fats and etc.
I am a big fan of Lara Bars but since I am trying to be frugal as much as I can, I decided to make my own and what’ s better than a freshly prepared snacks right? It only takes a few minutes using the right kind of food processor. In my case, I use Hamilton Beach Food Processor from Target. It makes my life so much easier with its simple designs and functionality. With only 4 buttons, It saves me plenty of time in the kitchen by doing the slicing, chopping, mixing, pureeing for me.
Here’s a very simple but delightful recipe I want to share with you.
Ingredients:
1 cup Almond Nuts
1-cup pecan, cashew, walnut (optional) or a mixture
1 cup pitted Medjool dates
1 cup Organic Sun dried apricot or Organic Sun dried Calimyrna Figs, Raisins or a mixture
Instructions:
- Pulse nuts in a food processor until they are in small pieces. Some larger pieces will remain but don’t worry about it.
- Add the pitted dates and process until sticky.
- Add the rest of the sun- dried fruits like figs, raisins, or apricots. Process until the mixture comes together.
- Pinch a small amount of the mixture and roll it into ball at a desired size.
- Store in an airtight container.
